Menu Plan Monday–September 7, 2009

I can honestly say that I’m pretty prepared for this week! I did all the grocery shopping this weekend and found some pretty good deals. That being said, we are going to be eating quite a lot of chicken this week…haha.

I already prepared some of it and put it into the freezer with the marinade. I also have a huge ham I purchased about 2 weeks ago that I will be getting out and making. The ham itself is huge, so I’m sure once it’s good and cooked some will become lunch meat and some will be frozen for future meals.

So, here is the plan for the week.

1. BBQ chicken, carrots, mashed taters and yeast rolls

2. Taco salad

3. Caribbean Jerk chicken (grilled), with brown rice and corn

4. Brown sugar ham, baked sweet potatoes and a veggie

5. Pecan crusted chicken

6. Leftover buffet!!

I also would really like to tackle some desserts this week. I have been wanting cheesecake forever and finally relented and bought a Jell-o no bake cheesecake. There is also a recipe for freezer pies that I am looking forward to trying. I tend to make most of the desserts during the holiday festivities, so now is the time to try new recipes and get them just so before the family dives in.
